I think you are asking if the best approach would be to do a 3rd person over the shoulder camera following a low polygon character?

that would all be personal preference honestly, and the choices you make as a designer for what more effectively portrays the feel your looking for.

I want to do a 3rd person over the shoulder and I was wondering if using a low poly mesh was the best option or if there was another means such as creating components at runtime instead of importing or something.  Basically I want to make a cave and I was wondering what the best method for making the mesh for it is.
